Creamy Penne with Cabbage and White Beans

This is a delicious easy and nutritious recipe with health benefits for digestion with  fiber and and vitamins from Michele Urvater’s “Monday to Friday” Cookbook (1991 pub.) Great when you don’t want to spend a whole lot of time in the kitchen. I shred the cabbage in the morning as I sometimes get lazy in the late afternoon! (I add a little dash of garlic powder and cayenne to this recipe to deepen the flavor..also I add salt and add a little more grape juice as needed for sauce. Sauce can be thickened a bit if desired, with a little cornstarch)

By now we all probably have way too many cookbooks. Some can go, but there are some that are “Keepers”. This is one of them…hope you can find a copy!
